Sweet Plantains Stuffed w/ Meat, Avocado & Melted 6 Cheese!


        " Sweet Plantains Stuffed w/ Meat, Avocado & Melted 6 Cheese"


Hello! Sweet & Savory! Can we say yum? YUM! It's so simple to make and so versatile. Most importantly you will be out the kitchen fast! That in it self deserves and A+

These Stuffed Plantains are great on their own or you can make them as a side.

These are examples of some I have made:





 Ingredients:

- Sweet Plantains ( I used about 6 for 3 people) Use as many as you need.

MEAT:

- Ground meat (chicken, turkey, beef or pork) which ever you like.

-Seasoning- I use Adobo you can use Salt & Pepper or the seasoning of your preference.




-A drizzle of Olive Oil

-Sofrito
Half a small Onion: (optional)



- 1 Sazon 1 small packet (adds color and flavor)




- 2 cloves of Garlic or 1 tbs of Garlic paste (If you don't have either then you can sprinkle some garlic over your meat)



- Recaito (2 or 3 leaves cut into small pieces)









-Red or Green Bell Peppers ( dice up a little for the meat. For flavoring in the meat)


 
 

Garnish: Diced Avocado Chunks, Shredded Cheese of your choice






Another meal I made : This time with White Rice, Black Beans and Some Chips I baked




Meat Preparation: (Cook the meat as you usually would for like a taco or follow this recipe)

Add a drizzle of Olive Oil or cooking oil into a hot pan. Add 1 or 2 diced Garlic cloves or 1 tsp of Garlic paste, 1 or 2 tbs of Sofrito (recipe is on this page), Diced Red Bell Peppers, (you can add diced Onions if you like, Dice 2 or 3 Recaito leaves, STIR, Add Ground meat, add 1 Sazon, Adobo or Salt and Pepper for Seasoning...Any other seasoning you have at home and prefer. Let it cook stir every few minutes until meat is fully cooked.




Sweet Plantains Preparation: Fry or bake the sweet plantain WHOLE until it's done (cooked) and golden.

Secret: If I'm baking my Sweet Plantain I first sir fry them in butter until golden and then I put them in the oven shhh don't tell no one lol





Stuffing your Sweet Plantains! :

Once the sweet plantains are done take them out and cut the sweet plantain in the middle but not all the way to the bottom (just enough to stuff), then stuff it with the meat you chose (ground beef, pork, chicken, turkey) that you already cooked and add some pieces of avocado, cover with shredded cheese and put it in the oven for a minute or in the microwave for a minute until cheese melts and voila! lol Deliciousness!

Puerto Rican Chicken Stew! (A Healthy Meal)



Chicken Stew or Pollo Guisado!

So much flavor..


It's been a while since I last posted, but trust me I have not stopped cooking or baking I just haven't had a lot of time but, no worries, I am back! I am organizing myself much better so that I don't miss out on the things I love to do. Like sharing my recipes with you. *Smiles*

Now let's talk Chicken Stew! There are so many ways that I make this stew. I am always creating new flavors in the kitchen because I get bored very easily and why not have fun trying new things. Chicken stew is very popular in P.R and in the Spanish culture in general. It is delicious and you can make it with anything you like. (I will give you ideas and of course you will have your own as well) Threw out the week I really like to change things up so I go from splurging to very healthy meals. If I cook rice today then I will do mash tomorrow, salad the day after and so on. If I fried today then tomorrow I will bake etc. 

When it comes to Chicken stew you can use the whole cut up chicken or just the pieces you have or like. In this case I had some thighs and wasn't sure how I was going to make them because *whispers* they are not my favorite ~sigh~ but hey I had already bought them and I thought what better way of enjoying them then on a stew? Yum! 

Here is what I used...

6-8 Chicken Thighs
Sofrito (My recipe to one of the types of sofrito I make is on this page)
Olive oil or the oil you like to use (since I am doing a healthier version I used Olive oil)
Red Pepper (1)
2 sazon
1 Medium Onion
1 Recaito
1 Small Sweet Orange (My secret twist)
Garlic paste or 2 cloves
Adobo
Jamon (cooking ham cut in small pieces) 
Aceitunas (Olives with out the pit) I use stuffed Olives.
2 cups of water (If you are using a whole chicken you might need 3 cups of water) Use enough water that ALMOST covers the meat but doesn't drown it.

Meat Seasoning:
I season the meat with.. 
1 tsp of sofrito
1 tsp of garlic
Adobo or salt and pepper

1 sazon



Cooking:
Turn on pan on low heat


Once oil if warm add a little  bit of Olive Oil or the oil you have
2 tbs of Sofrito


1 tbs of Garlic paste or 2 cloves (minced)

Jamon / Cooked ham cut into small pieces

Add your seasoned chicken and let it absorb some of the flavor on low heat
turn chicken after 2 or 3 minutes 

Squeeze the juice of one SWEET orange
(this will tenderize your chicken and not only that it will add great flavor to it) If the orange is sour do NOT add.

Add olives (About a spoon full or 2)

Add Onions in rounds or diced

Add red Peppers in rounds or diced

Add 2 cups of water (according to how much meat you are making)


Add half a can of Goya Tomato Sauce


Recaito diced or in pieces (the amount of flavor in these leaves is heaven sent lol) I use them alot!

Some people add potato's and you can but I didn't in this particular stew. Like I mentioned above,this is just ONE way I make this stew there are many ways.

Turn to medium heat 

This is how my pan looked 

Don't worry about it looking a lot. It will all begin to shrink as it cooks and all those flavor will infuse in the chicken. So delicious!! 

Side:

While that cooks. You have to create your side. I wanted it to fill us up but I wanted it to be healthy so I made a great salad and I used Sweet Plantains!!!

Usually we would fry them because they taste so delicious fried, let's say the truth lol but I refrained and what I actually did was BOIL them until they were tender. 
I hate anything boiled trust me, I think it's boring lol or so I thought. *wink* 

After your meat if fully cooked, the stew will turn into a delicious sauce! This sauce is what I used to POUR over my BOILED sweet plantains. Infusing all it's flavor in the plantains. Making me not miss frying them at all. By all means if you want to fry them go right ahead it is just as delicious just not so healthy.

You can also make your side anything you'd like:

White Rice
Yellow Rice
Rice with beans
Asparagus
Mash
Vegetables
Yuca
Tostones
Guineitos
Mangu

Etc.

Once everything is done and you serve don't forget to place some of your stew over your sweet plantains.

Mash Potato & Apple Salad! A Puertorican Recipe.

Making BBQ Ribs, Apple & Mash Potato, Corn Muffin and Salad with Homemade Creamy Italian Dressing.

 
I'm sure if you have not heard about this salad before, you are probably thinking one of two things. Either your thinking "Yuck" or "Huh" lol but let me tell you it is delicious and it is very known in my country Puerto Rico especially on special events.

We usually accompany this with Pernil (Pork Shoulder) and Arroz con Guandules (Rice w/ Green Pigeons). Doesn't that sound delicious? Well, it really is!!

The picture on top is a meal I created recently with this apple mash, pork chops, salad and home made corn muffin. My mouth waters just remembering how delicious it was!

Not only is it delicious it is very simple to make as well. It is a mix of sweet and flavorful or salty as you might call it.


Ingredients (4 to 6 servings)

6 medium potatoes (peeled)

cut them in medium size pieces similar so the following picture


boiled in water and a pinch of salt until softened.



Put TWO eggs to boil and once they are fully hard boiled take the shell off and give it a rinse to make sure no egg shells remains.

Slice it similar to the picture below.



While that happens dice some GREEN PEPPERS & a SMALL ONION

Let's Bring Healthy Dinner's Back! Baked Chicken & Vegetables w/ Red Wine!

 
We are going to create the most delicious and easiest dinner the whole family will enjoy!
 
Let's beging with cleaning our vegetables. Put them to the side for now.
 
Wash your Chicken as well. Prepare to cut it if you did not purchase the pre-cut portions.
 
Once you have cut the chicken plan in a pan or aluminium mold of your choice

No More Tasteless Salmon!



Am I the only one that finds it very hard to find a place where Salmon actually has flavor? Or that it isn't so dry?
 
If your answer is "No!" then you came to the right place. I will share with you a quick but flavorful way to cook a delicious Salmon meal with easy steps to follow.

Of course, this is the way that works for me and you can add your own personality to every recipe I post. Enjoy your time in the kitchen  creating every meal. This is only one way that I make my Salmon I will post more ways very soon.
 
 
Recipe Step by Step
 

First make sure you have washed your salmon.
 
 
In a low heat pan add 2 tbs of butter
 
 


Add 1 tbsp. of Sofrito

Diced Cilantro
Garlic (diced, crushed, paste) which ever you like! 1 tbs

 
STIR!
