Let's Bring Healthy Dinner's Back! Baked Chicken & Vegetables w/ Red Wine!

 
We are going to create the most delicious and easiest dinner the whole family will enjoy!
 
Let's beging with cleaning our vegetables. Put them to the side for now.
 
Wash your Chicken as well. Prepare to cut it if you did not purchase the pre-cut portions.
 
Once you have cut the chicken plan in a pan or aluminium mold of your choice


Like so..

 
Let's begin to season our meat
 
Using Adobo or Salt & Pepper
 
Garlic, Oregano, and just about any spice you like on your meat.

 
Also, season your meat with Sofrito (the recipe is on this page)
 
Once your chicken is seasoned and just right in flavor you can start with the vegetables
 
Then place the vegetables with the chicken
Of course this is only a few vegetables. You can add as many as you please and like.
 
Cut your potatoes into big chunks or wedges
You choose if you like to remove the skin or not
 
Add broccoli
 
Cut up your carrots
 
Sweet Potatoes
 
 
Lemon slices
 
Big chunks of onions

 
Your cutting your onions in big chunks and your lemons into slices because they are only going to be added for flavor. Once the lemon is being cooked it will release all  of it's juice and the onion all of it's flavor.
 
Cut some Peppers of your choice (for flavor & color) place over everything.

 

We are going to add ingredients over the vegetables
 
Sprinkle some salt & pepper to the vegetable for flavor
 
Fine dice Garlic sprinkle it over everything
 
Your going to add cilantro
 
Dice your cilantro sprinkle it over everything
 
1 cup of red cooking wine pour it over everything
This is what is going to create an amazing taste to your meal!
 
 
Put it in the oven for about 1 hour at 350 degrees. Check at about 30 minutes. You can stir if you like and in 30 minutes more check again if done then you can take it out if not add more time.
 
Make sure your chicken is cooked WELL.
 
Once it is done you can serve as is or with a salad
 
Avocado Salad
 
Or just Avocado. Yummy!
