Making BBQ Ribs, Apple & Mash Potato, Corn Muffin and Salad with Homemade Creamy Italian Dressing. |
We usually accompany this with Pernil (Pork Shoulder) and Arroz con Guandules (Rice w/ Green Pigeons). Doesn't that sound delicious? Well, it really is!!
The picture on top is a meal I created recently with this apple mash, pork chops, salad and home made corn muffin. My mouth waters just remembering how delicious it was!
Not only is it delicious it is very simple to make as well. It is a mix of sweet and flavorful or salty as you might call it.
Ingredients (4 to 6 servings)
6 medium potatoes (peeled)
cut them in medium size pieces similar so the following picture
boiled in water and a pinch of salt until softened.
Put TWO eggs to boil and once they are fully hard boiled take the shell off and give it a rinse to make sure no egg shells remains.
Slice it similar to the picture below.
While that happens dice some GREEN PEPPERS & a SMALL ONION
Take ONE small Apple preferably sweet apples. I use GALA apples they are perfect for this recipe.
Take off all of the skin and cut it up into small pieces.
Ex.
By now your potatoes should be done. Rinse out all water and MASH HALF 1/2 of the potatoes and keep half of the potatoes just the way they are.
Add in a bowl:
Half of the potatoes that is mashed
diced peppers
diced onions
diced apples
slices of boiled eggs
The other half of the potatoes that is NOT mashed
Mayonnaise
(add mayo according you your own taste)
Mix everything together with the Mayonnaise while folding With a fork slightly break down some of the potato "chunks"
You want the feeling of mash potatoes but you also want the feeling of texture. Which will be provided to you by the apples and the eggs and of course the pieces of whole potatoes.
You are now done! Wasn't that soo simple? When you prepare this salad like any salad you can add or take away from it as you like and make it yours.
