Mango Cheesecake w/ Mango Glaze!

Talk about delicious!
 
This Mango cheesecake has Mango inside and Mango flavor with a Mango glaze!
Where going Mango crazy!! 


I made this cheesecake yesterday and it is about done (giggles) It is so delicious. Especially if you love Mango. Even though I added Mango several times, you can always edit it to your personal preference.

Let's start with the glaze so that while the cheesecake bakes the glaze cools off nicely.


Glaze Ingredients:
 
1/2cup Mango pulp 
(save the rest for a mango smoothie)
 

 2tbsp Water

 2tbsp Sugar

 1tbsp Lime juice


 
Preparation of Glaze:
Put all the ingredients in a pan and cook in medium heat until it becomes thick, it will bubble and that is fine. You need it to turn into what looks like a glossy mango sauce. The pictures attached are to give you an idea of the consistency. Then let it cool completely and let's work on the cheesecake.

Cheesecake Ingredients:
 
2 Philadelphia Cream Cheese
(or any cream cheese of your choice)
 
 
 
1 Can of Sliced Mango's or 1 Mango fruit

 
 
1 egg
 
 
1 Pre-made Cheesecake crust or you can make it at home
 
 
1 cup of sugar (you can add more or less)
 
 
2 vanilla tsp. or 1 vanilla bean
 
 
 
Cheesecake Preparation:
 
At the bottom of your Crust place slices of Mango to cover the bottom.
Save about 2 or 3 slices to add to the mix.
 
In a blender or mixer add
 
 
1 egg
2 Philadelphia cheese at room temperature
1 cup of sugar
2 tsp. of vanilla
2 or 3 pieces of mango slices
(from the can or from the actual fruit)
 
*save the light syrup for the mango smoothie*
 
MIX & taste.
Are you content with the amount of sugar? If not add more.
 
Pour the mix over the Mango in the crust and pop it in the pre heated oven at 325 until golden and to make sure it's done insert in the center a toothpick or fork and if it comes out clean, it is done!
 
Once it is fully cooked let it rest until cool and then place in the fridge for about an hour.
 
When fully cooled down and chilled spoon the Mango glaze over the already done Cheesecake and smooth with a spoon or spatula. Put it back in the fridge for a few minutes or  better yet 1 hour or 2! The more the better and serve!
 
 
 
Honestly, the longer you leave it in the fridge the more the glaze infuses it's flavor into the cheesecake and the glaze becomes firm. It is just delicious.
